Tokyo House in Everett has some really tasty sushi. It has been my choice for sushi for about six months so far. The chef, choy, is an outgoing person. I like how he gives me tid-bits of sushi samples sometimes. My favorate, try the 911 roll.

Sorry this one is not in Seattle. "Richmond Sushi" in Richmond BC Canada. If you go late at night they have an all you can yeat special. It is a reduced menu late at night but there is still plenty of choices. At a great price, like $11.00 last time I went back in November.
The best sushi at the best price, just givie it a try. I make the drive at least quarterly just for the sushi.

Hiroshi's on Eastlake

has anyone been to this one?
I have been going about once a week or sometimes a little bit less, for the past few months. It is convenient for me location-wise, but it's also quite good. I have always had excellent quality sushi and the service has also been great except for on Valentine's day but i think you just have to grin and bear it when employees are overwhelmed. Anyway, what i usually get is the Chirashi or Hiroshi's choice sushi sampler. Both are about the same price, $17, and it's more than enough for one person although i always manage to shove it all in. Many times i'm not as hungry and i get the sashimi appetizer which is about the same size as Hana's sashimi DINNER at half the cost (and i can't even compare the quality as i believe Hana on broadway is ghetto sushi.)

Anyway, i dont have a lot of time for specifics but i just wanted to pop in and recommend Hiroshi's. Open daily until 10 except for Mondays, and on the weekends i think they stay open a bit later with live Jazz on friday nights.

yum.

Kisaku

this place is between greenlake and wallingford, in that little business strip in the middle of the neighborhood at 55th and meridian. It's across the street from the Tangletown, down the street from the Luau.

it's what I'd call a "foo-foo" or "creative" sushi place. They move away from traditional sushi perhaps even more than Mashiko. Particularly with the appetizers. They have a european style calamari dish, a shrimp coctail that had a decidedly SE Asian flavor set, and a mushroom salad. all of which were damn good.

The fish was excellent. The first time I was there, they had the best albacore sashimi I've ever had, and I'm a big fan of skipjack/bonito. The chef's special appetizer has often been bonito.

It's a busy place, I still haven't gotten a seat at the bar. I did do omakase at the table. that's not as good, but it was pretty darn good. It was a little disappointing that they stuck to menu items. The folks at mashiko like to go off-menu for omakase.

It's a casual atmosphere. They've got a nice back room for large parties. Weird hours-- they're closed tuesdays and thursdays but open on mondays.

For me, this is the sort of place to go when it's monday, or I don't feel like driving to west seattle. Or I want to hit Luau for drinks before and/or after.

best uni yet

a good friend and i went to mashiko last night for one of our semi-regular sushi dates. when we got there, i noticed that they had uni on the specials board, so i decided to to get an order, nigiri-style.

i haven't eaten uni too many times (maybe 6-8, definitely less than ten), but am definitely developing an appreciation for it. the last time i was out with this friend (at Fuji in the ID) was the best until last night.

over time, though, i've begun to realize that i almost prefer it sahsimi-style. i don't want the texture of the rice and seaweed interfering with the experience of the uni itself.

so, i got my nigiri. i popped the first piece in my mouth whole. damn, that's good. for the second, i peeled off the seaweed and ate half of it with rice, half without. ok, that's *really* good.

my dinner companion knows when i'm having a sublime food experience (it clearly shows on my face), and acknowledged as much. i told her it was the best i'd had yet, and that she should think about trying some (she's had uni a few times, and described herself as "not over the hump" yet). she agreed to try it, so i ordered more, sashimi-style. this came with a bit of lemon.

i put a small piece on my friend's plate. she took the tiniest bite, and soon we were sharing the food-bliss. she finished it, as i slowly savored the rest. it was amazingly fresh, just the right amount of firmness, sweet and creamy-custardy, without the slightest trace of bitterness or the strong iodine/brine flavors tha i've noticed on a few occassions.

i squeezed a few drops of lemon on the last two bites worth. with the first of them, i almost wished i hadn't, as i felt it detracted from the experience. however, the second bite (sadly, the last uni of the night) worked! the lemon juice hit the roof of my mouth, where it provide an accent (crisp, tart, zingy) or counterpoint to the richness of the uni itself.

i could go on, as the reader can probably tell. and i haven't even started on the other items ... :)

cheers,
~stuart

Sushi OUTSIDE Seattle?

I work in the north end and managed to find four different sushi places within the Everett area to munch on for lunch. The problem is, once I get there I can't really go with the sashimi, just because...well, it's not as FRESH as it is when it comes off the docks in Ballard.

Can anyone recommend a truly excellent sushi place in the north end? You'd think working for a Japanese company would actually MEAN that they might have a list of decent sushi places...but honestly most of the guys I work with go to McDonald's.

Go figure.

Best Sushi in Seattle

I divide my time between Los Angeles and Seattle. When it comes to sushi, Seattle suffers by comparison. As is the case with Thai restaurants, sushi restaurants are ubiquitous in Seattle, but none of them, at least in my experience, can be considered outstanding. I think this is due largely to the relative lack of sophistication of the patrons of sushi restaurants in Seattle--mostly white people whose experience with sushi is of the California roll genre--compared to the predominantly Japanese patronage of the leading sushi restaurants in Los Angeles. Some of the better sushi restaurants in Seattle will serve you things like aji, ankimo, and mentaiko. But ask for engawa, kanimiso, or shirako, and you’ll likely get an astonished look, followed by the news that they don’t serve that. Seasonal specialties flown in from Japan, like fuki no tou, are also virtually impossible to get in Seattle. Some of the best sushi restaurants in Los Angeles only serve ankimo during the winter months, when the monkfish liver is at its best due to its high oil content. That said, some of the best sushi I’ve had in Seattle was at Sanmi Sushi in Magnolia. Although the selection was limited, the quality of the fish was excellent.

I don't know Tom Armitage, but damn, I love him.

Sushi Zen in Mill Creek/Silver Lake

13206 Bothell Everett Hwy in Mill Creek

it's the second exit on I5 north of 405, the one with the old drive in/flea market on the south east side of the cloverleaf. You shoot about a mile east and right where that road hits the bothell-everett hwy, there's a strip mall with a McMineman's pub. Zen is right in there.

Nick from Nikko downtown and his wife, Tamiko, bought the place last year from the previous Korean owners, and remade what was (supposedly) a mediocre place to go get some rolls into a very solid choice for north end (far north end, really) sushi. A friend of mine told me about this place, since it's near where her Japanese mom lives. They aren't sushi freaks, more the "order three cali roll" type. But she said that they had turned their roll place into more of the type of place I'd like.

So I've tried it a half dozen times since then, all for lunch. I like it quite a bit, and it's worth the ten minute drive up from work. That, and I was starting to go to yamasan too many times per week, and it's a nice change of pace. They have a lunch menu with bento and sushi combo deals for reasonable prices. I haven't ordered off that.

Zen offers a wide variety of rolls, and a pretty large list of menu sushi, and three or so specials each day. The fish is of very high quality, and the menu selection isn't quite your standard selection. They always have sea bass, for example, and it's been excellent. Zen is pretty swanky for being in a strip mall, and it's never crowded for lunch. The prices are a little higher than you'd pay at a place of comparable quality like Yamasan or Izumi. However, the portions of nigiri are considerably larger, as are the rolls, so you end up getting out of there for about the same price as yamasan-- around $20-25 a person.

When I say the portions of nigiri are larger, the rice ball is about the same size-- just the piece of fish is larger. And the rice is crumbly. it doesn't stick together like anywhere else I've been. So you have to forget chopsticks, or make a mess, and just eat with your hands. They really have excellent albacore, and usually have either o-toro or chu-toro, and often both. The Sea Bass has been outstanding all winter, as has been the hirame (fluke) and snapper. The last time I went, they had aji as a sashimi special. and we got that. It was excellent. Some of the best aji that I've had in a while. They took the flesh from a whole spanish mackrel and presented it as a simple presentation, with a little skin as is usual. Then they fried the body with a bit of curl, and added that behind the sashimi. So we could pick the cheeks of the aji, which was excellent.

Nick is a taciturn motherfucker, and the ordering system-- even if you sit at the bar-- doesn't encourage interaction with the chef. you tick off what you want on paper from a list. there are write in slots for the specials. I'm not even sure if it's Nick behind the bar. Just a talk, silent Japanese guy. He has either a mexican or a japanese assistant who makes the rolls. They're good rolls. But since we've been going regularly, and not ordering the cheapo bento lunch, they've been warming up to us, and last time they threw us a free order of these fried potato things that seemed like patties of samosa filling. they were great. But so filling that we couldn't finish what we'd already ordered.

I like natto, as does the guy at work I eat sushi with. Zen offers a natto roll that's the best I've had. They use a lighter version of natto. it's not quite as stanky and dark as most I've had. They chop the beans up before making the roll, and get the rice to bean balance just right.

They offer several rolls which are made, then tempura fried. And there's something that I noticed on the menu, which is that they will tempura fry a roll for a buck. So last time we went, we said "what the hell" and got the natto roll deep fried. The natto inside a roll usually comes out cold, and gets more sticky, slimy and flavorful as it warms to room temp. We had to wonder what frying it would do. When we ordered it, Nick (or whoever the chef was) said "are you sure-- do you know what natto is?" We said yeah, and he shook his head and laughed a little. First time I've ever had that reaction from a sushi chef. They usually try to push your food boundaries. They asked us how it was, and watched us eat the first piece. It was actually very good. certainly more flavorful, sticky, and slimy than usual. I'm not sure I would have liked it with a more pungent natto filling. Afterwards, Tamiko said that there was only one other white person who would order natto. So we scored points, I guess.

I will say that there is one large drawback to Zen, and that's the mollusks. The octopus is rubbery. Hajime at Mashiko got me to like tako, and explained that his is good because it isn't frozen, and the rubbery texture comes from freeze-thaw. The only other place I've had tender octopus is at Kisaku. Yamasan's is rubbery, too. I've tried other mollusks there-- surf clam, scallop, and squid-- and they were all sub-par. But I've yet to find an eastside/north place that has good mollusk, so I have to resign myself to not getting tako for lunch.

I haven't been to Zen for dinner. I'll give it a try sometime and check out the omakase. I don't expect it to be special, the way the place is set up, with the checklist ordering and minimal interaction with the chef. But you've got to try.

To summarize-- lay off the mollusks. try the specials. the fish is great, and there's a high fish to rice ratio. The rice is oddly crumbly, but tasty. The menu seems pricey, until you realize you have to order less. creative, well-made rolls. no crowd. A very friendly waitstaff but a taciturn chef. Sake is very overpriced.

Usually when I have sushi it's in belltown: Saito's, Wasabi (yeah, yeah-- complaints noted.) Anyone have a recommendation for a good place around Broadway or perhaps 15th? Preferrably not too upscale/expensive.

[crossed from 'For the love of Sushi']

I've had uni four or five times, probably. The first time, my response was one of surprise -- "Wow, this is strange, but I think I like it. I'll have to try again."

But last night, I had my best uni ever! The texture was wonderful, smooth, creamy. There was no hint of the iodine / brine that I've sometimes noticed. It was sweet, delectable, wonderful!

This was at Fuji Sushi, in the International District in Seattle -- one of my favorite sushi places.

UNI YUM!

So I finally went to Mashiko's in West Seattle and had a great time- their sashimi plate blew my mind- I came home 80$ dollars poorer- slightly tipsy on Sake- but felt like I had been laid. Really odd.
Apparently, Mashikos is the creator of the bumper stickers I have seen about town sushiwhore.com
From what I understand you can actually watch the sushi bar on a web cam- I saw it there...I think what makes it so addictive is the texture, and the way your body feels when you have good sushi.hmmmm...

Blue C in Fremont

I just ate at this place last night, and I was pleasantly surprised. It's boat-style sushi, but they use a metal conveyor belt instead of the little boats floating in nasty-looking water. Very futuristic, they have a giant screen showing J-pop videos on the wall, the plates are color-coded and have the name of a Tokyo subway line on them. And you push a button to get a waitron's attention. The best part was the very reasonable prices..none of the plates were more than $4! Most nigiri plates were only $2.50...these are almost Vancouver prices! I ate myself silly and it was still only $29, with a beer.
It's right in the thick of Fremont, so forget parking nearby, but it's right on the bus line in the same block as Peet's, Sonic Boom, and Jai Thai. Address is 3401 Fremont Ave N.
Anyone else have thoughts on the place?

White Salmon and Wild Salmon

With all the talk of mercury in our waters, it seems like wild is the way to go.

Last night at Wasabi bistro they featured two types of wild salmon- the lovely (and talented even) white salmon had me spell bound. Does anyone know if this is a feature at sushi spots regularly?

New Naked Sushi Saturdays

I just found this when looking for something to do today.

http://nwtekno.org/vb/showthread.php?threadid=65931&eventid=14370

Apparently it's a new weekly, Dj's, sake, and a naked sushi display. I am wondering how good the sushi is though if it's all you can eat.
