best uni yet

a good friend and i went to mashiko last night for one of our semi-regular sushi dates. when we got there, i noticed that they had uni on the specials board, so i decided to to get an order, nigiri-style.

i haven't eaten uni too many times (maybe 6-8, definitely less than ten), but am definitely developing an appreciation for it. the last time i was out with this friend (at Fuji in the ID) was the best until last night.

over time, though, i've begun to realize that i almost prefer it sahsimi-style. i don't want the texture of the rice and seaweed interfering with the experience of the uni itself.

so, i got my nigiri. i popped the first piece in my mouth whole. damn, that's good. for the second, i peeled off the seaweed and ate half of it with rice, half without. ok, that's *really* good.

my dinner companion knows when i'm having a sublime food experience (it clearly shows on my face), and acknowledged as much. i told her it was the best i'd had yet, and that she should think about trying some (she's had uni a few times, and described herself as "not over the hump" yet). she agreed to try it, so i ordered more, sashimi-style. this came with a bit of lemon.

i put a small piece on my friend's plate. she took the tiniest bite, and soon we were sharing the food-bliss. she finished it, as i slowly savored the rest. it was amazingly fresh, just the right amount of firmness, sweet and creamy-custardy, without the slightest trace of bitterness or the strong iodine/brine flavors tha i've noticed on a few occassions.

i squeezed a few drops of lemon on the last two bites worth. with the first of them, i almost wished i hadn't, as i felt it detracted from the experience. however, the second bite (sadly, the last uni of the night) worked! the lemon juice hit the roof of my mouth, where it provide an accent (crisp, tart, zingy) or counterpoint to the richness of the uni itself.

i could go on, as the reader can probably tell. and i haven't even started on the other items ... :)

    i just had Uni for the second time and so far have found my ultimate experience: Fuji. If it gets better than that, please post the address of Mashiko. I enjoyed the temperature, the smell, the texture, flavor, everything about it. The first time i had it at I Love Sushi in Bellevue and didn't know what to expect so instead of being disappointed I was just unimpressed. My friend dining with me at the time mentioned that it was far from the best Uni he'd ever had...however, he's had it right from the shell.

    I now consider myself no longer an Uni virgin. But at $3.50 a piece, I will try to forget my sublime experience at Fuji....at least for the rest of the month.

      mahiko is still my best uni, but fuji is my second-best ...

      i don't know the exact address, but it's on california ave in west seattle. i'm sure the website will guide you in: www.sushiwhore.com.

      it's currently sea urcin breeding season in the northern hemisphere, so you probably should avoid for now unless you're sure it's not from the north. and if it's not, i'm not so sure i'd want any, given the time required for travel.

        The place in Wallinford/Greenlake is called Kisaku

        Mashiko occasionally has live uni. I got some last season, but missed out this year at all the places that potentially carry live Uni, like Izumi in kirkland. Hajime was saying that there wasn't as much of it around as usual.

        Mashiko had Uni on the specials board in early June. It was alaskan uni that had yet to go out of season, but Hajime warned us that it wasn't top notch. Since most other restaurants who still offer uni have shifted to frozen, I went ahead and asked to have some in our omikase. It was actually pretty good. Small dollops on the tempura fried herb leaf presentation that mashiko often does. it'd had been a long time, and was probably the last decent uni until halloween, so perhaps I was just giving it some slack.

        Frozen uni is supposedly better than fresh, out of season uni. But it's not as good. If you're eating uni in August, it's almost certainly frozen, so bide your time and save money until the fall.

        My number one is Mashiko
        Second best uni was Kisaku

        I'll have to check out this fuji place. In the fall.

          I've only tried uni at Mashiko, because when I went in for omakase and Hajime asked what I wouldn't eat and I said uni, (even though I had never tried it), he made it a mission to show me the error of my ways.
          I think it was back in March that I tried it, served on a tempura-fried shiso leaf. It was divine.
          I haven't been served it since in the 2-3 times I've had omakase since at Mashiko, even though I saw it on the specials board.
          What is the season for it? I would like to try it again.

            roughly Nov to May, to my knowledge.

              Yeah, Hajime is a master of changing people's minds about what they "don't like". I think I've seen them serve other items on the fried shiso leaf...just ask.
              In that same meal, he also convinced me that my hatred of tamago was unfounded...I'd just had BAD tamago.
              Bummer about the season, I'll have to wait until fall to try it again..sounds like it has a similar season to oysters.

                Yes, Shisho leaf. that's the herb leaf I was trying to remember the name of. It's a very nice presentation and combination of flavor.

                I had only had frozen uni, done in the style of the big glob in the rice and seaweed cup (the way that roe is presented) before I had it at mashiko. I gave it a few shots, never liked it, and gave up on it. Hajime asked me what I didn't like during an omikase, and hit me with nigiri style uni, in season and fresh, flamed with his trusty propane torch, and topped with caviar. by nigiri style, I mean a little glob on a rice ball, like it was fish. I was converted. I can eat it now in the traditional cup presentation, if it's quality uni, but I'd rather see the same about of uni divided onto more rice or shisho leaves.

                My understanding was that the solid season is mid-november until mid-april. Sometimes good stuff will pop up early, and it's spotty after april as they go get them in colder and colder waters.

    some like uni with reeeeeaaaaly ripe strawberry,,ummmm always look for a nice bright color uni (like a fruit would have when it is perfect) not a bruised soggy blob....which you may know might as well be a different food. Naked
